For the Sugar Cookie Crust:

1 cup unsalted butter, softened

1 cup granulated sugar

1 egg

1 teaspoon vanilla extract

2 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon salt

For the Cheesecake Filling:

16 oz cream cheese, softened

¾ cup granulated sugar

2 eggs

1 teaspoon vanilla extract

2 tablespoons all-purpose flour

For the Topping:

¼ cup sugar for sprinkling

Optional: colorful sprinkles

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish or line it with parchment paper for easy removal.

    Make the Sugar Cookie Crust:

      - In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.

        - Add in the egg and vanilla extract, mixing until well combined.

          - In a separate bowl, whisk together the flour, baking powder, and salt.

            - Gradually add the dry ingredients to the wet ingredients, mixing until the dough forms.

              - Press the dough evenly into the bottom of the prepared baking dish. Set aside.

                Prepare the Cheesecake Filling:

                  - In another bowl, beat the softened cream cheese until smooth and creamy.

                    - Add in the sugar and mix until combined.

                      - Add the eggs one at a time, mixing well after each addition.

                        - Stir in the vanilla extract and flour until no lumps remain.

                          Assemble the Bars:

                            - Pour the cheesecake mixture over the sugar cookie crust, spreading it evenly.

                              - Sprinkle the top with sugar and optional colorful sprinkles for a fun touch.

                                Bake:

                                  - Bake in the preheated oven for about 30-35 minutes, or until the cheesecake is set and only slightly jiggles in the center.

                                    - Remove from the oven and allow it to cool completely in the pan on a wire rack.
