For the Crust:

1 cup unsalted butter, softened

½ cup granulated sugar

2 cups all-purpose flour

¼ teaspoon salt

1 teaspoon vanilla extract

For the Lemon Filling:

4 large eggs

1 ½ cups granulated sugar

1/3 cup all-purpose flour

½ cup freshly squeezed lemon juice (about 2-3 lemons)

Zest of 2 lemons

Powdered sugar for dusting (optional)

Instructions
 

Preheat and Prepare:

    Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan with cooking spray or line it with parchment paper for easy removal.

      Make the Crust:

        In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Gradually add the flour and salt, mixing until combined. Stir in the vanilla extract.

          Bake the Crust:

            Press the crust mixture evenly into the bottom of the prepared baking pan. Use your hands or the back of a spatula to flatten it out smoothly. Bake in the preheated oven for 15 minutes until lightly golden.

              Prepare the Lemon Filling:

                In a separate bowl, whisk together the eggs and granulated sugar until well combined. Add the 1/3 cup of flour, lemon juice, and lemon zest. Mix until completely smooth.

                  Combine and Bake Again:
