Ingredients

1 pound ground beef

8 oz egg noodles

2 tablespoons vegetable oil

4 cloves garlic, minced

1 inch ginger, grated

1 green bell pepper, thinly sliced

1 cup carrots, julienned

1/2 cup scallions, sliced

1/4 cup soy sauce

2 tablespoons brown sugar

1 tablespoon hoisin sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 teaspoon red pepper flakes (optional, for heat)

Sesame seeds, for garnish

Instructions

Cook the Noodles: In a large pot, bring salted water to a boil. Add the egg noodles and cook according to the package instructions until al dente. Drain and set aside.

Brown the Beef: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.

Add Aromatics: Stir in the minced garlic and grated ginger, cooking for about 1-2 minutes until fragrant.

Incorporate Vegetables: Add the sliced bell pepper and julienned carrots to the skillet. Sauté for another 3-4 minutes until the vegetables are tender-crisp.

Prepare the Sauce: In a small bowl, whisk together soy sauce, brown sugar, hoisin sauce, rice vinegar, sesame oil, and red pepper flakes (if using) until well combined.

Combine Everything: Pour the sauce over the beef and vegetables. Stir well to coat everything evenly and bring to a simmer for about 2 minutes.

Mix in Noodles: Add the cooked egg noodles to the beef mixture. Toss everything together until the noodles are well coated with the sauce and heated through, about 2-3 minutes.

Serve: Remove from heat and sprinkle with sliced scallions and sesame seeds. Serve immediately, enjoying the sweet and savory flavors together.
