Sweet and Sour Chicken Skewers

Ingredients
  

1 lb (450g) chicken breast, cut into 1-inch cubes

1 cup bell peppers, diced (mix of colors for visual appeal)

1 cup pineapple chunks (fresh or canned)

1/2 cup red onion, diced

1/4 cup soy sauce

1/4 cup rice vinegar

1/4 cup ketchup

1/4 cup brown sugar

1 tsp garlic powder

1 tsp ginger powder

1/2 tsp red pepper flakes (optional for heat)

Salt and pepper to taste

Wooden or metal skewers (if using wooden, soak in water for 30 minutes)

Instructions
 

Marinate the Chicken: In a mixing bowl, combine soy sauce, rice vinegar, ketchup, brown sugar, garlic powder, ginger powder, red pepper flakes, salt, and pepper. Whisk until well blended. Add the chicken cubes, coating them well in the marinade. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

    Prepare the Skewers: If you’re using wooden skewers, soak them in water for 30 minutes to prevent burning. Preheat your grill or grill pan over medium-high heat.

      Assemble the Skewers: Thread the marinated chicken, bell peppers, pineapple chunks, and red onion onto the skewers, alternating between each ingredient for a colorful presentation.

        Grill the Skewers: Place the skewers on the preheated grill. Cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and reaches an internal temperature of 165°F (75°C), and the vegetables are tender and slightly charred.

          Glaze the Skewers: Halfway through grilling, brush any leftover marinade over the skewers for an extra layer of flavor, ensuring the chicken and veggies remain juicy.

            Serve: Once cooked, remove from the grill and let them rest for a few minutes. Serve the skewers hot with your choice of rice or a cold side salad. Garnish with fresh cilantro or green onions for added freshness.
