Sweet Apple Cinnamon Oat Cups

Bursting with the warm flavors of baked apples and cinnamon, these nutritious oat cups are not only easy to make but also packed with wholesome ingredients like rolled oats, bananas, and milk. 2 cups rolled oats

1 ½ cups milk (dairy or non-dairy)

1 large ripe banana, mashed

1 cup diced apples (peeled and cored)

1/3 cup maple syrup (or honey)

1 tsp vanilla extract

1 tsp cinnamon

½ tsp nutmeg

¼ tsp salt

1 tsp baking powder

1/4 cup chopped walnuts or pecans (optional)

¼ cup raisins or dried cranberries (optional)

Additional apple slices and nuts for topping

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a muffin tin or line with muffin liners.

    Mix Wet Ingredients: In a large bowl, combine the mashed banana, milk, maple syrup, and vanilla extract. Whisk until well mixed.

      Add Dry Ingredients: To the wet mixture, add the rolled oats, baking powder, cinnamon, nutmeg, and salt. Stir well to combine.

        Incorporate Apples and Nuts: Gently fold in the diced apples, chopped walnuts or pecans (if using), and raisins or dried cranberries (if using) until evenly distributed throughout the mixture.

          Fill Muffin Tin: Spoon the oat mixture evenly into the prepared muffin tin, filling each cup almost to the top. Press down slightly to pack the mixture.

            Add Toppings: Top each oat cup with additional apple slices and a sprinkle of chopped nuts for extra texture and flavor.

              Bake: Place the muffin tin in the preheated oven and bake for 25-30 minutes, or until the oat cups are golden brown and firm to the touch.

                Cool and Serve: Allow the oat cups to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature.
