4 large waffles (store-bought or homemade)

2 large apples (preferably Granny Smith or Honeycrisp), peeled, cored, and diced

1 tablespoon lemon juice

2 tablespoons brown sugar

1 teaspoon cinnamon

1/4 cup chopped pecans or walnuts (optional)

1/4 cup shredded coconut (optional)

1/2 cup cream cheese, softened

1/4 cup powdered sugar

1 teaspoon vanilla extract

Maple syrup, for drizzling

Instructions
 

Prepare the Filling: In a medium bowl, combine the diced apples, lemon juice, brown sugar, and cinnamon. Toss until the apples are well-coated. If using, stir in the chopped nuts and shredded coconut. Set aside to let the flavors meld for about 10 minutes.
