Sweet Corn & Bacon Pasta Bake

8 oz (224 g) penne pasta

4 slices of thick-cut bacon, chopped

1 cup (150 g) fresh sweet corn (or 1 cup frozen corn, thawed)

1 small onion, finely diced

2 cloves garlic, minced

1 cup (240 ml) heavy cream

1 cup (100 g) shredded mozzarella cheese

1/2 cup (50 g) grated Parmesan cheese

1 tsp smoked paprika

Salt and black pepper to taste

1/2 cup (70 g) cherry tomatoes, halved (for garnish)

Fresh parsley or basil, chopped (for garnish)

Instructions
 

Preheat your oven: Preheat the oven to 375°F (190°C) and grease a 9x13 inch baking dish.

    Cook the pasta: In a large pot of boiling salted water, cook the penne pasta according to package directions until al dente. Drain and set aside.

      Cook the bacon: In a large skillet over medium heat, add the chopped bacon and cook until it’s crispy, about 5-7 minutes. Transfer the bacon to a paper towel-lined plate, but leave the drippings in the pan.

        Sauté the vegetables: In the same skillet, add the diced onion and sauté in the bacon drippings until translucent, about 4-5 minutes. Stir in the minced garlic and cook for an additional minute, until fragrant.

          Combine the ingredients: In the skillet, add the sweet corn, cooked bacon, heavy cream, smoked paprika, salt, and pepper. Stir well and let it simmer for about 3-5 minutes, allowing the flavors to meld.

            Mix pasta and cheese: In a large mixing bowl, combine the cooked pasta and the bacon-corn mixture. Add half of the mozzarella cheese and half of the Parmesan cheese, mixing until evenly coated.

              Transfer to baking dish: Pour the pasta mixture into the prepared baking dish, spreading it out evenly. Top with the remaining mozzarella and Parmesan cheese.

                Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly, and the top is golden brown.

                  Garnish and serve: Remove from the oven and let it cool for a few minutes. Garnish with halved cherry tomatoes and fresh parsley or basil before serving.
