1/2 cup cornmeal

1 tablespoon baking powder

1/2 teaspoon black pepper

1 cup sweet corn kernels (fresh, frozen, or canned)

1 cup shredded sharp cheddar cheese

2 large eggs

1 cup buttermilk (substitute with milk + 1 tbsp vinegar if desired)

1/4 cup chopped fresh chives (optional for garnish)

Butter or oil for cooking

Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, cornmeal, baking powder, salt, and black pepper until fully combined.

    Add Corn & Cheese: Fold in the sweet corn kernels and shredded cheddar cheese, ensuring they are evenly distributed throughout the flour mixture.

      Combine Wet Ingredients: In another bowl, whisk the eggs and then add the buttermilk. Mix until well combined.

        Combine Wet and Dry: Pour the wet mixture into the dry ingredients. Stir gently until just combined. Be careful not to overmix; some lumps are okay!

          Preheat Pan: Heat a non-stick skillet or griddle over medium heat and add a bit of butter or oil to coat the surface.

            Cook Pancakes: For each pancake, pour about 1/4 cup of the batter onto the skillet. Cook until bubbles form on the surface (about 3-4 minutes), then flip and cook for another 2-3 minutes on the other side until golden brown.

              Repeat: Continue with the remaining batter, adding more butter or oil as needed.
