1 cup fresh or frozen sweet corn, thawed

1/2 cup all-purpose flour

1/4 cup cornmeal

2 large eggs

1/4 cup milk

1 tsp baking powder

1/2 tsp salt

1/4 tsp black pepper

1/2 tsp smoked paprika (optional)

2 tablespoons fresh chives or green onions, finely chopped

4 slices of your favorite cheese (cheddar or pepper jack works great)

4 eggs (for frying)

4 slices of cooked bacon or avocado (optional for added richness)

4 English muffins or bagels, split and toasted

Butter or oil, for frying

Make the Corn Fritters: In a large bowl, combine the sweet corn, flour, cornmeal, eggs, milk, baking powder, salt, pepper, and smoked paprika. Mix until just combined. Fold in the chopped chives or green onions.

    Cook the Fritters: Heat a skillet or frying pan over medium heat. Add a tablespoon of butter or oil. Once hot, drop scoops of the corn fritter batter (about 2 tablespoons for each fritter) into the skillet, flattening them slightly. Cook for about 3-4 minutes on each side or until golden brown and cooked through. Repeat with the remaining batter, ensuring you add more butter or oil as needed. Set the fritters aside on paper towels to absorb excess oil.

      Fry the Eggs: In the same skillet, crack the four eggs, cooking them sunny-side up or to your desired doneness. Season with salt and pepper.

        Assemble the Sandwiches: Start by placing a corn fritter on the bottom half of each toasted English muffin or bagel. Top with a slice of cheese, then add the cooked egg. If using bacon or avocado, layer it on top before finishing with the other half of the muffin or bagel.
