4 boneless, skinless chicken breasts

1 cup pineapple chunks (fresh or canned, drained)

1/2 cup soy sauce

1/4 cup brown sugar

1/4 cup honey

1/4 cup ketchup

2 cloves garlic, minced

1 teaspoon grated fresh ginger (optional)

1 teaspoon sesame oil

1 red bell pepper, sliced

1 green bell pepper, sliced

1 onion, sliced

1 tablespoon cornstarch (optional, for thickening)

Cooked rice, for serving

Chopped green onions and sesame seeds, for garnish

Instructions
 

Prepare the Chicken: Place the chicken breasts at the bottom of the crockpot.

    Make the Sauce: In a medium bowl, combine the pineapple chunks, soy sauce, brown sugar, honey, ketchup, minced garlic, grated ginger (if using), and sesame oil. Mix well until everything is combined.

      Fill the Crockpot: Pour the sauce mixture over the chicken breasts. Add the sliced red and green bell peppers, and onion on top.

        Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours, or until the chicken is tender and cooked through.

          Thicken (optional): If you prefer a thicker sauce, mix the cornstarch with 2 tablespoons of water in a small bowl until smooth. About 30 minutes before serving, stir in the cornstarch mixture, and turn the crockpot to high to let the sauce thicken.

            Serve: Remove the chicken from the crockpot and shred it using two forks. Return the shredded chicken to the pot and mix well with the sauce and vegetables.

              Garnish and Enjoy: Serve the Sweet Hawaiian Chicken over rice, and garnish with chopped green onions and sesame seeds for an added crunch.
