Sweet Maple Sausage Breakfast Casserole

1 pound sweet maple sausage

6 large eggs

2 cups milk

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

8 cups cubed day-old bread (such as challah or sourdough)

1 cup shredded cheddar cheese

1/2 cup maple syrup (plus extra for drizzling)

1/2 cup fresh blueberries (optional)

1/2 cup chopped fresh pecans (optional)

Salt and pepper to taste

Cooking spray or butter (for greasing the baking dish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish with cooking spray or butter.

    Cook the Sausage: In a large skillet over medium heat, add the sweet maple sausage. Cook until browned and fully cooked, breaking it apart with a spatula as it cooks. Once browned, remove from heat and set aside to cool slightly.

      Whisk the Egg Mixture: In a large mixing bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, nutmeg, salt, and pepper until well combined.

        Assemble the Casserole: In the greased baking dish, layer half of the cubed bread evenly across the bottom. Pour half of the egg mixture over the bread, followed by half of the sausage, half of the shredded cheese, and half of the maple syrup. If desired, sprinkle half of the blueberries and pecans on top. Repeat this layering process with the remaining ingredients to form another layer.

          Soak: Let the assembled casserole sit for about 15-20 minutes, allowing the bread to absorb the egg mixture.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Then remove the foil and bake for an additional 15-20 minutes, or until the casserole is set and a golden brown color appears on top.

              Serve: Once baked, remove from the oven and let it cool for about 5-10 minutes. Drizzle with additional maple syrup if desired. Cut into squares and garnish with extra blueberries or pecans before serving.
