Ingredients
  

1 cup all-purpose flour

1/4 cup granulated sugar (plus extra for coating)

1/2 cup water

1/4 cup unsalted butter, cut into cubes

1/4 teaspoon salt

1/2 teaspoon vanilla extract

1/2 teaspoon ground cinnamon (for coating)

1 large egg

Vegetable oil (for frying)

Chocolate sauce or caramel sauce (for dipping)

Instructions
 

Prepare the Dough: In a medium saucepan, combine the water, butter, salt, and 1/4 cup sugar. Bring this mixture to a boil over medium heat, stirring occasionally until the butter has completely melted.

    Add Flour: Once boiling, remove from heat and stir in the flour until a dough forms. It will come together and pull away from the sides of the pan. Allow it to cool slightly for about 5 minutes.

      Incorporate Egg: Add the egg and vanilla extract to the dough, mixing vigorously until fully incorporated and smooth.

        Shape the Bites: Transfer the dough to a piping bag fitted with a star tip. Pipe small bite-sized lengths (about 1-2 inches) directly into hot oil. You can also use a spoon to scoop small amounts of dough and drop them into the oil.

          Fry Until Golden: Heat vegetable oil in a deep pan over medium heat to about 350°F (175°C). Fry the churro bites in batches for about 2-3 minutes, or until golden brown. Use a slotted spoon to remove them and set them on a paper towel-lined plate to drain excess oil.

            Coat in Cinnamon Sugar: In a shallow dish, mix together the remaining 1/4 cup sugar and ground cinnamon. Roll the hot churro bites in the mixture to coat them thoroughly.
