2 cups rolled oats

1 cup whole wheat flour

1/2 cup brown sugar, packed

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon cinnamon

1/2 cup unsalted butter, melted

1/4 cup honey

1 teaspoon vanilla extract

1 cup fresh or frozen raspberries (thaw and drain if using frozen)

1/4 cup raspberry preserves (optional for extra sweetness)

Instructions
 

Preheat your oven: Preheat the oven to 350°F (175°C). Grease a 9x9 inch baking pan or line it with parchment paper for easy removal.

    Mix dry ingredients: In a large bowl, combine the rolled oats, whole wheat flour, brown sugar, baking powder, baking soda, salt, and cinnamon. Stir well to combine all dry ingredients evenly.

      Combine wet ingredients: In a separate bowl, whisk together the melted butter, honey, and vanilla extract until smooth.

        Combine wet and dry mixtures: Pour the wet mixture into the dry ingredients and mix until just combined. The mixture will be crumbly but should hold together when pressed.

          Prepare the base: Reserve 1 cup of this oat mixture for the topping, and spread the rest evenly into the bottom of the prepared pan. Press down firmly to create an even layer.

            Add raspberry layer: Gently fold the raspberries into the remaining oat mixture. If you are using raspberry preserves, swirl this into the raspberries before spreading over the oat base.

              Top the bars: Spread the raspberry and oat mixture evenly over the base layer, crumbling it as you go to create a textured topping.

                Bake: Bake in the preheated oven for about 25-30 minutes or until the top is golden brown and set. You may want to check after 20 minutes to avoid overbaking.

                  Cool and slice: Once baked, remove from the oven and let the bars cool completely in the pan on a wire rack. Once cool, lift out of the pan (if lined) and cut into squares or bars.

                    Serve and enjoy: These bars can be stored in an airtight container for up to a week. They also freeze well, so feel free to save some for later!
