Sweet & Spicy Pineapple Chicken – A Tropical Delight!

1 lb (450g) boneless, skinless chicken thighs

1 cup fresh pineapple chunks (or canned)

2 tablespoons soy sauce

2 tablespoons honey

1 tablespoon chili paste (adjust to taste)

1 tablespoon olive oil

1 teaspoon garlic, minced

1 teaspoon ginger, minced

1 bell pepper, sliced (red or yellow for color)

1 small red onion, sliced

Salt and pepper to taste

Chopped green onions for garnish

Sesame seeds for garnish (optional)

Instructions
 

Marinate the Chicken: In a medium bowl, whisk together soy sauce, honey, chili paste, minced garlic, and minced ginger. Add salt and pepper to taste. Place the chicken thighs in the marinade, making sure they are well coated, and let them soak for at least 30 minutes (or up to 2 hours in the refrigerator for a stronger flavor).

    Prepare the Stir-Fry: Heat olive oil in a large skillet or wok over medium-high heat. Add the marinated chicken (reserve the marinade) and cook for about 5-7 minutes, turning halfway, until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.

      Sauté the Veggies: In the same skillet, add the sliced bell pepper and red onion. Sauté for about 3-4 minutes, until they are slightly softened.

        Add Pineapple and Marinade: Toss in the pineapple chunks and pour the reserved marinade over the veggies in the skillet. Bring to a gentle simmer for about 2 minutes, allowing the flavors to meld together.

          Combine Chicken and Cook: Return the cooked chicken to the skillet, stirring to coat it with the sauce and veggie mixture. Cook for an additional 2-3 minutes until everything is heated through and well combined.

            Serve and Garnish: Once everything is cooked, remove from the heat. Serve the Sweet & Spicy Pineapple Chicken over steamed rice or quinoa, and garnish with chopped green onions and sesame seeds if desired.
