1 cup all-purpose flour

1/2 cup masa harina (corn flour)

1/2 teaspoon baking powder

1/2 teaspoon salt

1/2 cup hot water

Oil for frying

For the Filling:

1 pound ground beef (or substitute with turkey, chicken, or a plant-based alternative)

1 packet taco seasoning mix

1 cup refried beans (canned or homemade)

1 cup shredded lettuce

1 cup diced tomatoes

1/2 cup shredded cheese (cheddar or Mexican blend)

1/2 cup sour cream

1/4 cup chopped fresh cilantro (optional)

Hot sauce or taco sauce (to taste)

Instructions
 

Make the Shells:

    In a mixing bowl, combine the all-purpose flour, masa harina, baking powder, and salt. Gradually add hot water until a dough forms. Knead the dough for about 2-3 minutes until smooth. Divide into 6 equal portions and shape them into balls.

      Prepare the Filling:

        In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat, add the taco seasoning mix, and follow the packet instructions (usually adding some water). Stir to combine, then remove from heat.

          Shape the Shells:

            Roll out each dough ball into a flat circle about 1/4 inch thick. You may use a tortilla press or a rolling pin.

              Fry the Shells:

                In a large pot or deep skillet, heat oil over medium-high heat. Fry each flattened dough for about 1-2 minutes on each side or until golden brown and crispy. Remove and place on a paper towel-lined plate to drain excess oil.

                  Assemble the Chalupa:

                    Spread about 2 tablespoons of refried beans on each shell. Top with a generous portion of the seasoned ground beef. Layer with shredded lettuce, diced tomatoes, cheese, and a dollop of sour cream.
