Taco Casserole

Ingredients
  

1 lb ground beef or turkey

1 medium onion, diced

2 cloves garlic, minced

1 packet taco seasoning

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 cup salsa

8 medium-sized tortillas, cut into wedges

2 cups shredded cheddar cheese

1 cup sour cream

1 tbsp olive oil

Fresh cilantro, chopped (for garnish)

Sliced jalapeños (optional, for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large skillet over medium heat, add the olive oil and sauté the diced onion until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute until fragrant.

      Add the ground beef (or turkey) to the skillet, breaking it apart with a wooden spoon. Cook until browned and fully cooked through, about 5-7 minutes. Drain any excess fat.

        Stir in the taco seasoning, black beans, corn, diced tomatoes with green chilies, and salsa. Mix well and let it simmer for about 5 minutes to combine the flavors.

          In a 9x13 inch casserole dish, spread half of the tortilla wedges on the bottom. Spoon half of the meat mixture over the tortillas. Sprinkle with 1 cup of shredded cheddar cheese.

            Repeat the layers by adding the remaining tortilla wedges, the rest of the meat mixture, and then top with the remaining cheddar cheese.

              Cover the dish with aluminum foil (to prevent burning), and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.

                Once baked, remove from the oven and let it sit for 5-10 minutes. Serve with a dollop of sour cream on top and garnish with fresh cilantro and jalapeños if desired.
