Ingredients

1 lb ground beef or turkey

1 medium onion, diced

3 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (14 oz) diced tomatoes with green chilies

1 can (10 oz) diced tomatoes and green chiles (optional for extra heat)

1 packet taco seasoning

4 cups beef or vegetable broth

1 tsp cumin

1 tsp chili powder

Salt and pepper to taste

1 cup shredded cheddar cheese (for topping)

1 cup sour cream (for serving)

Fresh cilantro, chopped (for garnish)

Tortilla chips (for dipping)

Instructions

In a large pot or Dutch oven, brown the ground beef or turkey over medium heat until fully cooked. Drain excess fat if needed.

Add in the diced onion and minced garlic. Sauté for about 3-4 minutes until the onions become translucent.

Stir in the black beans, kidney beans, corn, diced tomatoes, taco seasoning, cumin, chili powder, and broth. Mix well to combine all ingredients.

Bring the soup to a boil, then reduce the heat and let it simmer for 20-25 minutes, allowing the flavors to meld.

Taste and season with salt and pepper as needed.

Serve the soup hot in bowls, topped with shredded cheddar cheese, a dollop of sour cream, and a sprinkle of fresh cilantro. Add tortilla chips on the side for dipping.
