Tasty & Crunchy Fried Zucchini Chips

2 medium zucchinis

1 cup all-purpose flour

1 cup breadcrumbs (panko for extra crunch)

1/2 cup grated Parmesan cheese

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

Vegetable oil, for frying

Prep the Zucchini: Wash the zucchinis and slice them into thin rounds, about 1/4-inch thick. Pat them dry with paper towels to remove excess moisture.

    Set Up Breading Stations: In three shallow dishes, set up your breading assembly line:

      - In the first dish, place the flour mixed with salt and pepper.

        - In the second dish, beat the eggs, and add a pinch of salt.

          - In the third dish, mix the breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, and a bit of salt and pepper.

            Bread the Zucchini Rounds: Dip each zucchini round into the flour, coating evenly, then dip it into the beaten eggs, and finally roll it in the breadcrumb mixture until well coated. Place the breaded zucchini chips on a baking sheet.

              Heat the Oil: In a large skillet or deep frying pan, heat about 1/4 inch of vegetable oil over medium-high heat until shimmering. (You can test the heat by dropping in a small piece of bread; if it sizzles, it’s ready.)

                Fry the Zucchini Chips: Working in batches to avoid overcrowding, carefully place the breaded zucchini chips into the hot oil.
