1 lb breakfast sausage (pork or turkey)

1/4 cup all-purpose flour

2 cups milk (whole or 2%)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon cayenne pepper (optional for heat)

4 large eggs

1 cup shredded cheddar cheese

1/4 cup chopped green onions (for garnish)

Hot sauce (optional, for serving)

Instructions
 

Prepare Tater Tots:

    Preheat your oven according to the package instructions for the tater tots. Spread them out in a single layer on a baking sheet and bake until golden and crispy, typically around 20-25 minutes.

      Cook the Sausage:

        In a large skillet over medium heat, crumble the breakfast sausage and cook until browned and cooked through, about 5-7 minutes. Remove excess grease from the pan, leaving about a tablespoon.

          Make the Gravy:

            Sprinkle the flour over the cooked sausage and stir to combine. Cook for 1-2 minutes to eliminate the raw flour taste. Gradually whisk in the milk, ensuring there are no lumps.
