1 lb boneless, skinless chicken thighs

1 tablespoon vegetable oil

4 cups chicken broth

1 cup water

1/2 cup soy sauce

1/4 cup brown sugar

2 tablespoons rice vinegar

1 tablespoon sesame oil

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 cups bok choy, chopped

1 cup carrots, julienned

1 cup shiitake mushrooms, sliced

4 oz dried rice noodles

2 green onions, sliced

Sesame seeds, for garnish

Prepare the Chicken: In a large pot, heat the vegetable oil over medium heat. Add the boneless chicken thighs and cook for about 5-7 minutes until browned on both sides. Remove the chicken from the pot and set aside.

    Make the Broth: In the same pot, add the minced garlic and grated ginger. Sauté for about 1 minute until fragrant. Pour in the chicken broth, water, soy sauce, brown sugar, rice vinegar, and sesame oil. Stir to combine.

      Simmer: Return the chicken to the pot, bring the mixture to a boil, then reduce to a simmer. Cover and cook for 20 minutes, allowing the chicken to cook through and the flavors to meld together.

        Shred the Chicken: After 20 minutes, remove the chicken thighs from the soup and let them cool slightly. Shred the chicken using two forks and return it to the pot.

          Add the Vegetables: To the broth, add the chopped bok choy, julienned carrots, and sliced shiitake mushrooms. Simmer for an additional 5-7 minutes until the vegetables are tender.

            Cook the Noodles: While the vegetables are cooking, prepare the rice noodles according to the package instructions. Drain and set aside.

              Assemble the Soup: Once the vegetables are tender, stir in the cooked rice noodles and heat through for an additional minute. Taste and adjust seasoning if necessary.
