For the Teriyaki Chicken:

1 lb boneless, skinless chicken thighs or breasts, sliced into bite-sized pieces

¼ cup soy sauce (low sodium preferred)

¼ cup mirin (sweet rice wine)

2 tablespoons brown sugar

1 tablespoon rice vinegar

1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

1 tablespoon minced ginger

1 tablespoon minced garlic

1 tablespoon sesame oil

1 teaspoon sesame seeds (for garnish)

2 green onions, chopped (for garnish)

For the Rice:

2 cups jasmine rice (or your preferred variety)

4 cups water

1 tablespoon rice vinegar

1 tablespoon sugar

1 teaspoon salt

For the Toppings:

Steamed broccoli florets

Shredded carrots

Cucumber slices

Edamame (optional)

Instructions
 

Prepare the Rice:

    - Rinse the jasmine rice under cold water until the water runs clear to remove excess starch. Combine the rinsed rice, water, and salt in a pot. Bring it to a boil, then reduce the heat to low and cover. Cook for 15-20 minutes until rice is tender and water is absorbed. Remove from heat and let it sit for 10 minutes before fluffing with a fork.

      - In a small bowl, mix together the rice vinegar and sugar until dissolved. Gently fold this mixture into the cooked rice for added flavor.

        Make the Teriyaki Sauce:

          - In a medium bowl, whisk together the soy sauce, mirin, brown sugar, rice vinegar, ginger, and garlic until well combined. Set aside.

            Cook the Chicken:

              - Heat the sesame oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until they are golden brown, about 5-7 minutes.

                - Pour the teriyaki sauce over the chicken in the skillet. Let it simmer for about 5 minutes, stirring occasionally.

                  - Add the cornstarch slurry to the skillet to thicken the sauce. Stir well and let it cook for an additional 2-3 minutes until the sauce coats the chicken beautifully.

                    Assemble the Bowls:

                      - Divide the rice into serving bowls. Top with the teriyaki chicken and generous amounts of sauce.
