Ingredients
  

2 salmon fillets (6-8 oz each)

1/4 cup soy sauce (low sodium preferred)

1/4 cup mirin (sweet rice wine)

2 tablespoons brown sugar

1 tablespoon rice vinegar

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

2 cups cooked jasmine rice

1 cup broccoli florets

1 carrot, julienned

1/2 cup snap peas

2 green onions, sliced

Sesame seeds for garnish

1 tablespoon sesame oil

Salt and pepper to taste

Instructions
 

Marinate the Salmon: In a bowl, combine soy sauce, mirin, brown sugar, rice vinegar, minced garlic, and grated ginger. Whisk until sugar is dissolved. Place the salmon fillets in a shallow dish, pour the marinade over them, cover, and let them marinate for at least 30 minutes (up to 2 hours in the fridge for more flavor).

    Cook the Rice: Rinse jasmine rice under cold water until it runs clear. In a pot, combine 1 cup of rice to 1.5 cups of water. Bring to a boil, reduce to a simmer, cover, and cook for about 15-20 minutes until the rice is tender. Fluff with a fork and set aside.

      Prepare the Vegetables: In a medium pan, heat sesame oil over medium heat. Add broccoli florets, julienned carrots, and snap peas, seasoning with a pinch of salt and pepper. Stir-fry for about 5-7 minutes until veggies are tender yet crisp. Remove from the heat and set aside.

        Cook the Salmon: Preheat a grill or skillet over medium-high heat. Remove the salmon fillets from the marinade (reserve excess marinade for glazing) and place them skin-side down on the grill or skillet. Cook for 4-5 minutes, then flip and cook for another 3-4 minutes, or until cooked through and flaky. Brush with the reserved marinade during the last minute of cooking for extra flavor.

          Assemble the Bowl: In serving bowls, start by placing a scoop of jasmine rice in the bottom. Next, arrange the sautéed vegetables alongside the rice. Place the cooked salmon fillet on top and drizzle any remaining teriyaki glaze.

            Garnish and Serve: Sprinkle with sliced green onions and sesame seeds. Serve immediately.
