1 tablespoon coconut oil

1 onion, diced

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons red curry paste

1 can (13.5 oz) coconut milk

4 cups vegetable broth

2 tablespoons soy sauce

1 tablespoon lime juice

1 red bell pepper, thinly sliced

1 cup snow peas or sugar snap peas

1 cup mushrooms, sliced

1 cup cooked chicken or tofu (optional)

2 green onions, chopped (for garnish)

Fresh cilantro (for garnish)

Lime wedges (for serving)

Cooked jasmine rice (optional, for serving)

Instructions
 

Heat the Coconut Oil: In a large pot, heat the coconut oil over medium heat. Once hot, add the diced onion and sauté until translucent, about 5 minutes.

    Add Aromatics: Stir in the minced garlic and grated ginger, cooking for another 1-2 minutes until fragrant.

      Incorporate Curry Paste: Add the red curry paste into the pot, mixing well with the onions, garlic, and ginger to create a fragrant base. Cook for an additional 2 minutes.

        Pour in Coconut Milk and Broth: Slowly pour in the coconut milk and vegetable broth, stirring to combine. Bring the mixture to a gentle simmer.

          Season the Soup: Add the soy sauce and lime juice, adjusting the seasoning based on your taste preferences.

            Add Vegetables: Once the soup is simmering, add sliced red bell pepper, snow peas, and mushrooms. If using, add the cooked chicken or tofu at this stage. Let everything cook for about 5-8 minutes until the vegetables are just tender.

              Garnish and Serve: Remove the soup from heat. Serve hot in bowls garnished with chopped green onions, fresh cilantro, and lime wedges on the side for squeezing. If desired, add a scoop of cooked jasmine rice to each bowl for a heartier meal.
