Ingredients
  

2 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

1 cup unsalted butter, softened

1 cup granulated sugar

½ cup packed brown sugar

1 large egg

2 teaspoons vanilla extract

½ cup chopped pecans or walnuts (optional)

Filling:

½ cup brown sugar, packed

2 tablespoons ground cinnamon

4 tablespoons unsalted butter, melted

Icing:

1 cup powdered sugar

2 tablespoons milk

½ teaspoon vanilla extract

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Prepare Dry Ingredients: In a bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon. Set aside.

      Cream Butter and Sugars: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.

        Add Egg and Vanilla: Beat in the egg and vanilla extract until well combined.

          Combine with Dry Mixture: Gradually add the dry ingredients to the butter mixture, mixing until just combined. If using, fold in the chopped nuts.

            Prepare the Filling: In a small bowl, mix together the packed brown sugar and ground cinnamon. Add the melted butter and mix until it forms a paste.

              Assemble the Cookies: Take a ball of dough (about 1 tablespoon), flatten it slightly, and then add around ½ teaspoon of the cinnamon filling in the center. Fold the edges of the dough over the filling, rolling into a ball again. Place on the prepared baking sheet and repeat with the remaining dough.

                Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack.

                  Make the Icing: In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth. Adjust the consistency by adding more milk or powdered sugar as needed.

                    Drizzle Icing: Once the cookies have cooled completely, drizzle the icing over the top of each cookie.
