2 lbs (900g) Yukon Gold potatoes, peeled and cut into evenly sized chunks

1/4 cup (60ml) olive oil

4 cloves garlic, minced

2 teaspoons sea salt

1 teaspoon freshly ground black pepper

1 teaspoon smoked paprika

1 teaspoon dried rosemary (or 1 tablespoon fresh rosemary, chopped)

1 teaspoon dried thyme (or 1 tablespoon fresh thyme, chopped)

Zest of 1 lemon

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easier cleanup.

    Prepare the Potatoes: Place the peeled and chopped potatoes in a large pot and cover them with cold water. Add a generous pinch of salt. Bring to a boil over high heat and cook for about 10 minutes, or until the potatoes are just starting to become tender but not falling apart (they should still hold their shape).
