6 large russet potatoes, peeled and chopped

1 medium onion, diced

3 cloves garlic, minced

4 cups chicken or vegetable broth

1 cup heavy cream

1 cup sharp cheddar cheese, grated

1/2 cup sour cream

1/2 cup cooked bacon, crumbled (plus extra for garnish)

1/4 cup green onions, sliced (for garnish)

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

1/2 teaspoon smoked paprika

2 tablespoons olive oil or butter

Instructions
 

Cook the Potatoes: In a large pot, heat the olive oil or butter over medium heat. Add the diced onions and garlic, sautéing until the onions become translucent, about 5 minutes.

    Add Potatoes & Broth: Add the chopped potatoes to the pot, then pour in the chicken or vegetable broth. Bring to a boil, then reduce heat to a simmer. Cover and cook for 15-20 minutes, or until the potatoes are tender.

      Mash & Mix: Once the potatoes are soft, use a potato masher to mash them slightly for a creamy texture (leave some chunks for heartiness). Stir in the heavy cream and bring the pot back to a gentle simmer.

        Add Cheese & Seasoning: Gradually stir in the sharp cheddar cheese, sour cream, crumbled bacon, salt, pepper, and smoked paprika. Continue to cook for another 5 minutes, stirring frequently, until the cheese is melted and everything is heated through.
