1 lb Italian sausage (or ground beef)

1 medium onion, diced

3 cloves garlic, minced

1 can (28 oz) crushed tomatoes

4 cups chicken or vegetable broth

2 cups uncooked pasta (like lasagna noodles broken into pieces)

2 tsp dried oregano

2 tsp dried basil

Salt and pepper to taste

1 cup ricotta cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

Fresh basil leaves for garnish (optional)

Instructions
 

In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spoon as it cooks. Drain any excess fat.

    Add the diced onion to the pot and sauté for about 3-4 minutes until the onion is translucent. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.

      Pour in the crushed tomatoes and broth, stirring to combine. Add the broken pasta, dried oregano, basil, salt, and pepper. Bring the mixture to a simmer.

        Reduce the heat and let it simmer for about 15-20 minutes, or until the pasta is cooked al dente.

          Meanwhile, in a medium bowl, mix together the ricotta, half of the mozzarella, and half of the Parmesan cheese. Season with a pinch of salt and pepper.

            Once the pasta is cooked, remove the pot from the heat. Ladle the soup into bowls and dollop a generous spoonful of the ricotta mixture on top of each serving.

              Sprinkle the remaining mozzarella and Parmesan cheese over the soup.

                Optionally, garnish with fresh basil leaves before serving.
