1 lb ground beef (or Italian sausage)

1 medium onion, diced

3 cloves garlic, minced

1 (28 oz) can crushed tomatoes

4 cups beef broth

1 can (15 oz) tomato sauce

2 teaspoons dried basil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

8 oz lasagna noodles, broken into pieces

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Fresh basil leaves for garnish

Salt and pepper to taste

Brown the Meat: In a large pot over medium heat, add the ground beef (or sausage). Cook until browned and crumbly. Drain excess fat if necessary.

    Sauté Vegetables: Add the diced onion to the pot and sauté for 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

      Add Tomatoes & Broth: Pour in the crushed tomatoes, beef broth, and tomato sauce. Stir in dried basil, oregano, and red pepper flakes. Season with salt and pepper to taste. Bring the mixture to a simmer.

        Cook the Noodles: Add the broken lasagna noodles to the pot. Cook according to the noodle package instructions until al dente, stirring occasionally.

          Prepare Cheeses: In a separate bowl, mix the ricotta cheese, half of the mozzarella, and Parmesan cheese together. Set aside.

            Combine & Serve: Once the noodles are cooked, remove from heat. Ladle the soup into bowls and add a generous scoop of the cheese mixture on top. Finish with the remaining mozzarella cheese.

              Garnish: Top with fresh basil leaves and additional Parmesan cheese if desired.
