Instructions

Make the Cookie Dough:

    - In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

      - Beat in the egg and vanilla extract until thoroughly combined.

        - In a separate bowl, whisk together the flour, baking soda, and salt.

          - Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing.

            Prepare the Pecan Pie Filling:

              - In a medium bowl, combine the chopped pecans, corn syrup, brown sugar, granulated sugar, melted butter, egg, vanilla extract, and salt. Mix until well blended and set aside.

                Assemble the Cookies:

                  - Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

                    - Scoop about 2 tablespoons of cookie dough and flatten it slightly on the prepared baking sheet, leaving space between each cookie.

                      - Spoon a tablespoon of the pecan pie filling onto the center of each cookie.

                        - Take another tablespoon of cookie dough and cover the filling, gently pressing around the edges to seal. Repeat with remaining dough and filling.

                          Bake:

                            - Bake the cookies in the preheated oven for 12-15 minutes or until the edges are golden brown. The centers may look slightly soft; they will firm up as they cool.

                              - Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack.

                                Garnish:

                                  - Once the cookies are completely cooled, sprinkle them with extra chopped pecans and a pinch of sea salt for added flavor.

Enjoy your deliciously unique Crumbl-style pecan pie cookies!
