2 pounds red potatoes, washed and cut into quarters

1/4 cup olive oil

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)

1 tablespoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon sea salt

1/2 teaspoon freshly ground black pepper

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large mixing bowl, combine the olive oil, fresh rosemary, garlic powder, onion powder, smoked paprika, sea salt, and black pepper. Stir well to create a flavorful marinade.

      Add the quartered red potatoes to the bowl and toss them in the marinade until they're evenly coated.

        Spread the potatoes in a single layer on a baking sheet lined with parchment paper. Make sure there’s space between them for even roasting.

          Roast in the preheated oven for 30-35 minutes, or until they are golden brown and crispy, flipping them halfway through for even cooking.
