Ingredients

1 ½ cups all-purpose flour

1 ½ teaspoons baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

½ cup buttermilk

1 ½ cups fresh strawberries, pureed (with a few whole for decoration)

1 cup heavy cream

2 tablespoons powdered sugar

Fresh mint leaves for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients: In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.

Add Eggs and Vanilla: Add the eggs, one at a time, mixing well after each addition, then stir in the vanilla extract.

Combine Wet Ingredients: Gradually add the buttermilk and strawberry puree to the butter mixture, mixing until combined.

Combine Dry and Wet Ingredients: Gradually incorporate the dry ingredients into the wet mixture, mixing just until no floury streaks are visible. Do not overmix.

Pour and Bake: Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

Cool the Cakes: Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, transfer to wire racks to cool completely.

Prepare the Whipped Cream: While the cakes are cooling, whip the heavy cream and powdered sugar together in a cold mixing bowl until soft peaks form.

Assemble the Cake: Once the cakes are cool, place one layer on a serving plate. Spread a generous amount of whipped cream on top and layer half of the whole strawberries.

Add the Second Layer: Place the second cake layer on top and spread the remaining whipped cream over the top. Decorate with more fresh strawberries and mint leaves if desired.

Serve: Cut into slices and serve chilled, savoring the delightful combination of fresh strawberries and fluffy cake.
