Ingredients

2 cups cooked and shredded chicken (rotisserie works great)

1 can (15 oz) great northern beans, drained and rinsed

1 can (15 oz) white corn, drained

1 can (10 oz) diced green chiles

1 medium onion, diced

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon paprika

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

1 cup low-sodium chicken broth

8 oz cream cheese (cubed)

1 cup shredded Monterey Jack cheese (for garnish)

Fresh cilantro (for garnish)

Lime wedges (for serving)

Instructions

Prepare the Base: In the crockpot, combine the shredded chicken, great northern beans, white corn, diced green chiles, diced onion, minced garlic, ground cumin, chili powder, paprika, salt, black pepper, and chicken broth. Stir well to combine all ingredients.

Add Creamy Goodness: Drop the cubed cream cheese on top of the mixture but do not stir. The cream cheese will melt down during cooking, creating a wonderful creamy texture.

Cook It: Cover the crockpot and set it to low for 6-8 hours or to high for 3-4 hours. The longer you cook it on low, the more the flavors will combine.

Final Touch: About 30 minutes before serving, carefully stir the chili to incorporate the melted cream cheese. Taste and adjust seasoning if necessary.

Serve: Ladle the chili into bowls and top with shredded Monterey Jack cheese and fresh cilantro. Serve with lime wedges on the side for an extra burst of flavor.
