4 slices of sourdough bread

2 tablespoons unsalted butter, softened

1 tablespoon mayonnaise

1 cup shredded sharp cheddar cheese

1 cup shredded Gruyère cheese

1/2 cup crumbled feta cheese

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1/2 teaspoon garlic powder

Salt and pepper to taste

1/4 cup caramelized onions (optional)

1 tablespoon Dijon mustard (optional)

Prepare the bread: Spread the softened butter on one side of each slice of sourdough. On the opposite side, spread a thin layer of mayonnaise for added richness and flavor.
