Ingredients

1 cup unsalted butter, softened

3/4 cup packed brown sugar

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup toffee bits (like Heath Bar bits)

1 cup chopped almonds (toasted for extra flavor)

Sea salt for sprinkling

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.

Cream Butter and Sugars: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 3-4 minutes).

Add Egg and Vanilla: Add in the egg and vanilla extract, mixing until well combined.

Mix Dry Ingredients: In another bowl, whisk together the flour, baking powder, baking soda, and salt.

Combine Mixtures: Gradually add the dry mixture to the wet mixture, mixing until just combined. Do not overmix.

Fold in Toffee and Almonds: Gently fold in the toffee bits and chopped almonds until they are evenly distributed in the dough.

Scoop and Shape: Use a cookie scoop or tablespoon to drop rounded dough balls onto the prepared baking sheets, spacing them about 2 inches apart.

Sprinkle with Sea Salt: Lightly sprinkle sea salt on top of each cookie dough ball before baking.

Bake: Bake for 10-12 minutes, or until the edges start to turn golden brown. The centers may look slightly underbaked but will firm up as they cool.

Cool and Enjoy: Remove cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely. Enjoy your delicious Toffee Almond Cookies!
