Ingredients

2 cups cherry tomatoes

1 whole bulb garlic

1/2 cup olive oil

1 teaspoon fresh thyme leaves

1 teaspoon balsamic vinegar

Salt and pepper to taste

1 ball of fresh burrata cheese

Crusty bread, for serving

Fresh basil leaves, for garnish

Instructions

Preheat your oven to 250°F (120°C).

Rinse and halve the cherry tomatoes, placing them in a single layer in a baking dish.

Slice the top off the bulb of garlic, exposing the cloves, and place it in the baking dish with the tomatoes.

Drizzle the olive oil evenly over the tomatoes and garlic. Make sure everything is well coated.

Sprinkle the thyme leaves, balsamic vinegar, salt, and pepper over the mixture. Toss gently to combine.

Cover the dish with aluminum foil and bake in the preheated oven for about 2 hours, or until the tomatoes are softened and fragrant.

Once done, remove the baking dish from the oven and let it cool slightly.

When ready to serve, use a small spoon to scoop out the burrata and place it on a serving platter.

Spoon the tomato garlic confit over the burrata, allowing the warm oil and juices to envelop the cheese.

                    Garnish with fresh basil leaves.

Serve with slices of crusty bread for dipping and savoring the flavors.
