For the Oreo Crust:

24 Oreo cookies, crushed

½ cup unsalted butter, melted

For the Chocolate Cheesecake Filling:

16 oz cream cheese, softened

1 cup granulated sugar

½ cup sour cream

½ cup heavy cream

3 large eggs

1 tsp vanilla extract

6 oz semi-sweet chocolate, melted

6 oz milk chocolate, melted

6 oz white chocolate, melted

For the Topping:

4 oz semi-sweet chocolate, grated

4 oz milk chocolate, grated

4 oz white chocolate, grated

Whipped cream (optional)

Instructions
 

Prepare the Oreo Crust: Preheat your oven to 350°F (175°C). In a mixing bowl, combine the crushed Oreos and melted butter until well mixed. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes, then remove and let cool.

    Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth and creamy. Add in the sour cream and heavy cream, mixing until well combined.

      Incorporate the Eggs: Add the eggs one at a time, mixing on low speed until just blended. Be careful not to overmix.

        Melt the Chocolates: In separate bowls, melt the semi-sweet, milk, and white chocolates either in the microwave or using a double boiler. Allow them to cool slightly before adding them to the cheesecake batter.

          Mix in the Chocolate: Divide the batter into three parts. To the first part, add the melted semi-sweet chocolate and mix until combined. Pour this layer over the cooled Oreo crust.

            Repeat Layers: To the second part, add the melted milk chocolate and mix well, then pour this on top of the first layer. Lastly, mix the remaining batter with the melted white chocolate and pour this on top.

              Bake the Cheesecake: Place the springform pan in the oven and bake for 55-70 minutes, or until the edges are set but the center is still slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.

                Chill: After cooling, refrigerate the cheesecake for at least 4 hours, preferably overnight to set completely.

                  Serve: Before serving, grate the additional semi-sweet, milk, and white chocolates over the top as a decorative and delicious topping. Optionally, add dollops of whipped cream for extra indulgence.
