Tuna Poke Bowls

Ingredients
  

1 lb sushi-grade tuna, diced into 1/2-inch cubes

1 cup sushi rice

1 1/4 cups water

1 avocado, sliced

1/2 cup edamame, shelled

1 small cucumber, thinly sliced

1/2 cup shredded carrots

1/4 cup green onions, chopped

2 tbsp soy sauce or tamari (for gluten-free)

1 tbsp sesame oil

1 tsp sriracha (adjust to taste)

1 tsp rice vinegar

Seaweed salad (optional, for garnish)

Sesame seeds (for garnish)

Pickled ginger (optional, for garnish)

Fresh cilantro or microgreens (for garnish)

Instructions
 

Cook the Rice: Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a pot, bring to a boil, then reduce heat to low and cover. Cook for 18-20 minutes until the water is absorbed. Remove from heat and let it sit for 10 minutes, covered.

    Prepare the Sauce: In a mixing bowl, whisk together soy sauce, sesame oil, sriracha, and rice vinegar. Taste and adjust seasoning if needed.

      Marinate the Tuna: Place diced tuna in a bowl and pour half of the marinade over it. Toss gently to coat and let it marinate in the refrigerator for 15-20 minutes.

        Assemble the Bowls: Fluff the cooked sushi rice with a fork. Divide the rice evenly among serving bowls. Top each bowl with marinated tuna, sliced avocado, edamame, cucumber, carrots, and green onions.

          Garnish: Drizzle the remaining marinade over the bowls. Add optional toppings such as seaweed salad, sesame seeds, pickled ginger, and fresh cilantro or microgreens.
