Turkey Skewers with Watermelon Salsa

For the Turkey Skewers:

1 pound turkey breast, cubed

2 tablespoons olive oil

2 teaspoons smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

Salt and pepper to taste

8-10 skewers (soaked in water if wooden)

For the Watermelon Salsa:

2 cups watermelon, diced

1 small cucumber, diced

½ red onion, finely chopped

1 jalapeño, seeded and minced (optional for heat)

¼ cup fresh cilantro, chopped

Juice of 1 lime

Salt to taste

Marinate the Turkey: In a large bowl, combine olive oil, smoked paprika, garlic powder, onion powder, dried oregano, salt, and pepper. Add the cubed turkey breast and toss to coat evenly. Cover and let marinate in the refrigerator for at least 30 minutes, or up to 2 hours for deeper flavor.

    Prepare the Watermelon Salsa: In a medium bowl, combine diced watermelon, cucumber, red onion, jalapeño (if using), and cilantro. Squeeze lime juice over the mixture and sprinkle with salt. Gently toss to combine. Taste and adjust seasoning if needed. Set aside.

      Assemble the Skewers: Preheat a grill or grill pan over medium-high heat. Thread the marinated turkey cubes onto the soaked skewers, leaving a little space between each piece to ensure even cooking.

        Grill the Skewers: Place the skewers on the grill and cook for about 12-15 minutes, turning occasionally, until the turkey is cooked through and has nice grill marks. The internal temperature should reach 165°F (74°C).
