Instructions

Prepare the Crust:

    - Preheat your oven to 325°F (163°C).

      - In a medium bowl, combine graham cracker crumbs, melted butter, sugar, and vanilla extract. Stir until well combined.

        - Press the mixture into the bottom of a 9-inch springform pan, ensuring it’s packed tightly and evenly. Bake for 10 minutes, then allow to cool while you prepare the filling.

          Make the Cheesecake Filling:

            - In a large bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.

              - Gradually add in the sugar and continue beating until fully incorporated.

                - Mix in the vanilla extract. Add eggs one at a time, mixing on low speed until just combined. Be careful not to overmix.

                  - Fold in the sour cream until well combined and smooth.

                    Assemble the Cheesecake:

                      - Pour half of the cheesecake filling into the cooled crust. Drizzle ½ cup of caramel sauce and sprinkle ½ cup of pecans over this layer. Gently swirl with a knife for a marbled effect.

                        - Add the remaining cheesecake filling on top and smooth the surface.

                          Bake:

                            - Bake in the preheated oven for about 55-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven, crack the door open, and let the cheesecake cool inside for 1 hour to prevent cracking.

                              - Remove from the oven and let it cool to room temperature. Then refrigerate for at least 4 hours, preferably overnight.

                                Prepare the Chocolate Ganache:

                                  - In a small saucepan over medium heat, heat heavy cream until it just begins to simmer.

                                    - Remove from heat, add in the chocolate chips, and stir until smooth and glossy.

                                      Final Assembly:

                                        - Once the cheesecake is fully chilled, carefully remove it from the springform pan.

                                          - Pour the chocolate ganache over the top of the cheesecake, letting it drip down the sides.

                                            - Drizzle additional caramel sauce on top, sprinkle with the remaining pecans, and if desired, a pinch of sea salt for an extra flavor kick.

                                              Serve:

                                                - Slice and serve your Turtle Cheesecake chilled. Enjoy every bite of this decadent dessert!
