Ingredients

1 lb ground beef

1 cup breadcrumbs

1 large egg

1/2 cup milk

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp Worcestershire sauce

1 tsp dried Italian herbs

1/2 tsp salt

1/2 tsp black pepper

1 cup shredded cheddar cheese

1 cup diced bell peppers (mixed colors)

1 cup marinara sauce

1 cup additional shredded cheese (melted for topping)

Fresh parsley for garnish

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Meat Mixture: In a large mixing bowl, combine the ground beef, breadcrumbs, egg, milk, chopped onion, garlic, Worcestershire sauce, Italian herbs, salt, and black pepper. Mix well until all ingredients are fully incorporated.

Layer the Base: Spread half of the meat mixture evenly in the bottom of a greased 9x13-inch baking dish.

Add Cheese and Veggies: Sprinkle the first cup of shredded cheddar cheese evenly over the meat layer. Then, add the diced bell peppers on top of the cheese.

Top with Remaining Meat: Carefully layer the remaining meat mixture on top of the bell peppers, pressing it down gently to ensure it holds together.

Add Sauce: Pour the marinara sauce over the entire casserole, spreading it out evenly.

Cheesy Finish: Top with the additional cup of shredded cheese, making sure to cover all corners for a gooey finish.

Bake: Place in the preheated oven and bake for 45-55 minutes, or until the meatloaf is cooked through (165°F internal temperature) and the top is bubbly and golden brown.

Garnish and Serve: Once baked, remove from the oven, let it cool for a few minutes, sprinkle with fresh parsley, and serve warm.
