1 cup (170g) semi-sweet chocolate, chopped

½ cup (115g) unsalted butter

2 large eggs

2 large egg yolks

½ cup (100g) granulated sugar

¼ teaspoon salt

1 teaspoon vanilla extract

¼ cup (30g) all-purpose flour

2 tablespoons cocoa powder, for dusting

Preheat Oven: Start by preheating your oven to 425°F (220°C) and prepare four ramekins by greasing them with butter and dusting them with cocoa powder to prevent sticking.

    Melt Chocolate and Butter: In a heatproof bowl, combine the chopped chocolate and unsalted butter. Set the bowl over a pot of simmering water (double boiler method) and stir until melted and smooth. Alternatively, you can melt them in the microwave in 30-second intervals, stirring in between.

      Whisk Eggs and Sugar: In a separate large mixing bowl, whisk together the eggs, egg yolks, granulated sugar, and salt until the mixture is light and frothy, about 2-3 minutes.

        Combine Mixtures: Once the chocolate and butter mixture has cooled slightly, pour it into the egg mixture. Add the vanilla extract and gently fold to combine, being careful not to deflate the eggs.

          Add Dry Ingredients: Sift the all-purpose flour into the mixture and gently fold until just combined and no flour streaks remain. Be cautious to avoid over-mixing.

            Fill Ramekins: Evenly distribute the batter among the prepared ramekins, filling each about ¾ full.

              Bake: Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes. The edges should be firm while the center remains soft.

                Cool: Once baked, remove from the oven and let the cakes sit for 1 minute. Run a knife around the edges to loosen, then carefully invert each ramekin onto a plate. Tap gently to release the cake.
