4 boneless, skinless chicken breasts

8 slices of Swiss cheese

8 slices of ham (preferably smoked)

1 cup all-purpose flour

2 large eggs, beaten

2 cups breadcrumbs (preferably panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 tablespoon olive oil

1 cup heavy cream

1 cup chicken broth

1 tablespoon Dijon mustard

1 tablespoon fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Flatten the Chicken: Preheat your oven to 375°F (190°C). Place each chicken breast between two sheets of plastic wrap. Use a meat mallet to pound them to about 1/2 inch thickness.

    Assemble the Filling: Lay 2 slices of ham and 2 slices of Swiss cheese on each flattened chicken breast. Roll the chicken tightly, starting from the wider end. Secure with toothpicks.

      Bread the Chicken: Set up a breading station: in one shallow dish, place flour seasoned with garlic powder, onion powder, salt, and pepper. In the second dish, place the beaten eggs. In the third dish, add the breadcrumbs. Dip each chicken roll first in the flour, then in the egg, and finally coat with breadcrumbs.

        Pan-Sear the Chicken: In a large oven-safe skillet, heat olive oil over medium-high heat. Add the chicken rolls and sear on all sides until golden brown (about 3-4 minutes per side). Remove from heat.

          Prepare the Creamy Sauce: In the same skillet, lower the heat and pour in the chicken broth, scraping up any brown bits from the pan. Stir in the heavy cream and Dijon mustard. Bring to a simmer and let it cook for 2-3 minutes until slightly thickened.

            Bake the Chicken: Place the chicken rolls back in the skillet (or transfer to a baking dish), spoon some creamy sauce over the top, and sprinkle remaining cheese. Bake in the preheated oven for about 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F or 75°C).

              Serve: Once done, let the chicken rest for a few minutes before removing toothpicks. Serve drizzled with the creamy sauce and garnish with fresh parsley. Add lemon wedges on the side for an extra zing!
