1 lb (450g) ground chuck (80% lean, 20% fat)

1 lb (450g) ground sirloin (90% lean, 10% fat)

2 tsp kosher salt

1 tsp freshly ground black pepper

1 tsp garlic powder

1 tsp onion powder

2 tbsp Worcestershire sauce

4 slices of sharp cheddar cheese

4 hamburger buns (brioche or your choice)

1 ripe avocado, sliced

1 cup lettuce (butter or iceberg)

1 large tomato, sliced

Red onion, thinly sliced

Dill pickles, for serving

Ketchup, mustard, and mayonnaise (optional)

Instructions
 

Prep the Meat: In a large mixing bowl, combine the ground chuck and ground sirloin. Gently mix by hand until just combined; avoid overworking the meat.

    Season the Mixture: Sprinkle the kosher salt, black pepper, garlic powder, onion powder, and Worcestershire sauce over the meat mixture. Mix thoroughly until the seasonings are evenly distributed.

      Shape the Patties: Divide the meat mixture into 4 equal portions (about 6 oz each) and gently shape them into patties, slightly wider than the buns. Make a shallow indentation in the center of each patty to prevent them from puffing up during cooking.

        Chill the Patties: Place the patties on a plate or tray and cover with plastic wrap. Refrigerate for at least 30 minutes to help them hold their shape during cooking.

          Prepare the Grill: Preheat your grill or stovetop grill pan to medium-high heat. Make sure the grill grates are clean and lightly oiled.

            Cook the Patties: Once the grill is hot, place the patties on the grill. Cook for about 4-5 minutes on one side. Flip the patties carefully and cook for another 3-4 minutes for medium-rare, or longer if desired. During the last minute of cooking, place a slice of cheddar cheese on each patty to melt.
