1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

1 medium onion, diced

1 bell pepper (red or green), diced

2 celery stalks, diced

4 cloves garlic, minced

1 can (14.5 ounces) diced tomatoes with green chilies

1 cup tomato sauce

1 cup low-sodium chicken broth

1 teaspoon Worcestershire sauce

1 tablespoon hot sauce (adjust to taste)

2 teaspoons Cajun seasoning

1 teaspoon dried oregano

1/2 teaspoon cayenne pepper (optional, for extra heat)

Salt and pepper to taste

2 bay leaves

2 green onions, sliced (for garnish)

Cooked white rice (for serving)

Instructions
 

In a large skillet or Dutch oven, heat the olive oil over medium heat. Add the diced onion, bell pepper, and celery. Sauté for about 5-7 minutes, or until the vegetables are softened.

    Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Add the diced tomatoes (with their juices), tomato sauce, and chicken broth to the skillet. Mix well.

        Stir in the Worcestershire sauce, hot sauce, Cajun seasoning, dried oregano, cayenne pepper (if using), and bay leaves. Season with salt and pepper to taste.

          Bring the mixture to a gentle simmer and let it cook for about 10-15 minutes, allowing the flavors to meld. Stir occasionally.

            Add the shrimp to the pot, stirring to combine. Cook for another 5-7 minutes, or until the shrimp are pink, opaque, and cooked through. Remove the bay leaves before serving.
