Ingredients

1 pound large shrimp, peeled and deveined

8 ounces linguine or spaghetti

4 tablespoons unsalted butter

4 tablespoons olive oil

4 cloves garlic, minced

1/2 teaspoon red pepper flakes (adjust to taste)

1/2 cup dry white wine (such as Sauvignon Blanc)

Juice of 1 lemon

Zest of 1 lemon

Salt and pepper to taste

1/4 cup fresh parsley, chopped

Optional: Grated Parmesan cheese, for serving

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add linguine or spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water and then drain the rest.

Sauté the Shrimp: In a large skillet over medium heat, melt 2 tablespoons of butter and 2 tablespoons of olive oil. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.

Add the Shrimp: Toss in the shrimp, season with salt and pepper, and cook for 2-3 minutes on each side until they turn pink and opaque. Be careful not to overcook the shrimp. Remove them from the skillet and set aside.

Create the Sauce: In the same skillet, add the white wine, lemon juice, and lemon zest. Let it simmer for about 3-5 minutes until slightly reduced. Scrape any browned bits off the bottom of the pan for added flavor.

Combine Everything: Return the shrimp to the skillet, and add the cooked pasta. Toss everything together, adding reserved pasta water a little at a time until you reach your desired consistency. Stir in the remaining butter and olive oil for extra richness.

Garnish and Serve: Remove from heat and stir in the chopped parsley. Taste and adjust seasoning if necessary. Serve immediately, with grated Parmesan on top if desired.
