Ingredients

2 cups all-purpose flour

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/4 cup unsalted butter, softened

1/2 cup whole milk

2 large eggs

1 tablespoon vanilla extract

Powdered sugar, for dusting

Oil, for frying

Instructions

In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt until well combined.

Add the softened butter to the dry ingredients and mix until crumbly.

In another bowl, whisk together the milk, eggs, and vanilla extract.

Gradually pour the wet mixture into the dry ingredients, stirring until a dough forms. Make sure not to overmix.

On a lightly floured surface, knead the dough gently for about 1-2 minutes until it is smooth.

Cover the dough with a clean kitchen towel and let it rest for 30 minutes to rise.

After resting, roll out the dough to about 1/4 inch thickness and cut into squares or rectangles (about 2 inches).

Heat oil in a deep frying pan or pot to 350°F (175°C).

Carefully drop a few beignets into the hot oil, frying until golden brown on each side (approximately 2-3 minutes per side). Be sure not to overcrowd the pan.

Once fried, remove the beignets from the oil and let them drain on paper towels.

While still warm, dust generously with powdered sugar.

Serve immediately for the best taste, or enjoy warm later!
