Ingredients

2 cups whole milk

1 cup heavy cream

¾ cup granulated sugar

1 tablespoon pure vanilla extract

3 tablespoons cornstarch

¼ teaspoon salt

Optional: crushed fruits (like strawberries or bananas) or chocolate chips for added flavor

Instructions

In a medium saucepan over medium heat, combine the whole milk, heavy cream, sugar, and salt. Stir occasionally until the sugar dissolves and the mixture is heated through, but do not let it boil.

In a separate small bowl, mix the cornstarch with a few tablespoons of the heated milk mixture to create a slurry. Whisk until smooth.

Gradually pour the cornstarch slurry back into the saucepan with the milk mixture, stirring constantly. Cook for another 3-5 minutes until the mixture thickens and coats the back of a spoon.

Remove the saucepan from heat and stir in the vanilla extract. Let the mixture cool for about 10 minutes.

If desired, fold in any crushed fruits or chocolate chips at this stage for extra flavor and texture.

Pour the vanilla pudding mixture into popsicle molds, leaving a little space at the top for expansion. Insert popsicle sticks and freeze for at least 4-6 hours, or until solid.

To remove the popsicles, run warm water over the outside of the molds for a few seconds. Gently pull the popsicles out and enjoy your creamy vanilla bliss!
