Ingredients

1 large head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or chickpea flour for gluten-free)

1 cup unsweetened plant milk (almond, soy, oat, etc.)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

1 cup breadcrumbs (Panko for extra crunch)

½ cup hot sauce (like Frank's RedHot or your favorite buffalo sauce)

2 tablespoons vegan butter, melted

Fresh parsley or green onions, for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper for easy cleanup.

Prepare the Cauliflower: In a large mixing bowl, add the cauliflower florets. Rinse them under cold water and dry them thoroughly with a kitchen towel or paper towels to ensure they’re as dry as possible.

Make the Batter: In another bowl, whisk together the flour, plant milk, garlic powder, onion powder, smoked paprika, salt, and black pepper until smooth. The batter should be thick enough to coat the cauliflower but not too thick that it clumps.

Bread the Cauliflower: Place the breadcrumbs in a shallow dish. Dip each cauliflower floret into the batter, allowing excess to drip off, then coat it in breadcrumbs, pressing gently to ensure the crumbs stick well. Place the breaded florets on the prepared baking sheet in a single layer.

Bake the Cauliflower: Spray the tops of the cauliflower wings lightly with cooking spray or brush with a little olive oil. Bake for 20 minutes in the preheated oven. After 20 minutes, flip each wing to ensure they brown evenly. Bake for an additional 15-20 minutes until crispy and golden brown.

Sauce It Up: While the wings are baking, mix the hot sauce and melted vegan butter in a bowl until well combined. Adjust the spice level to your preference by adding more hot sauce if desired.

Toss and Serve: Once the cauliflower wings are out of the oven, transfer them to a large bowl and drizzle the buffalo sauce mixture over them. Gently toss to coat the wings evenly.

Final Touches: Return the coated wings to the baking sheet and bake them for an extra 5-7 minutes to intensify the flavor and maintain the crispiness.

Garnish and Enjoy: Remove from the oven, garnish with fresh parsley or chopped green onions if desired, and serve immediately! Enjoy with vegan ranch or celery sticks on the side.
