Ingredients

1 large head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (can substitute with chickpea flour for gluten-free)

1 cup unsweetened plant-based milk (almond or soy work well)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust based on spice preference)

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup panko breadcrumbs (for extra crunch)

1 cup buffalo sauce (store-bought or homemade)

2 tablespoons olive oil (for drizzling)

Optional: Fresh celery sticks and vegan ranch dressing for serving

Instructions

Preheat Oven: Start by preheating your oven to 450°F (230°C) and line a large baking sheet with parchment paper for easy cleanup.

Prepare Cauliflower: Wash the cauliflower and cut it into bite-sized florets. Make sure they are uniform in size for even cooking.

Make Battering Mixture: In a large mixing bowl, combine the all-purpose flour, plant-based milk, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper. Whisk until the mixture is smooth and well-combined.

Coat Cauliflower: Dip each cauliflower floret into the batter, ensuring it is well coated. Let the excess batter drip off.

Add Breadcrumbs: Place the coated florets onto a plate or shallow dish filled with panko breadcrumbs. Press the florets into the breadcrumbs to ensure they are fully coated, adding more breadcrumbs if necessary.

Arrange for Baking: Lay the coated cauliflower wings onto the prepared baking sheet, ensuring they are evenly spaced and not touching each other for maximum crispiness.

Bake: Drizzle the wings lightly with olive oil to help them crisp up. Bake in the preheated oven for about 25-30 minutes, flipping halfway through, until they are golden brown and crispy.

Prepare Buffalo Sauce: While the cauliflower wings are baking, gently heat the buffalo sauce in a small saucepan over medium heat until warmed through.

Toss Cauliflower in Sauce: Once the cauliflower wings are done baking, remove them from the oven. In a large bowl, toss the crispy wings in the warmed buffalo sauce until fully coated.

Final Bake (Optional): For extra crispiness, return the sauced cauliflower to the baking sheet and bake for an additional 10 minutes.

Serve: Remove from the oven and serve immediately with celery sticks and your favorite vegan ranch dressing for dipping. Enjoy the explosion of flavors and textures!
