12 large cannelloni tubes

2 cups ricotta cheese

1 cup grated mozzarella cheese

1 cup grated Parmesan cheese

1 medium zucchini, finely chopped

1 red bell pepper, finely chopped

1 cup spinach, chopped

1 medium carrot, grated

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

2 cups marinara sauce

Fresh basil leaves for garnish (optional)

Instructions
 

Prepare the Filling: In a large mixing bowl, combine the ricotta cheese, half of the mozzarella cheese, half of the Parmesan cheese, chopped zucchini, red bell pepper, spinach, grated carrot, minced garlic, oregano, basil, salt, and pepper. Mix well until all ingredients are thoroughly combined.

    Fill the Cannelloni: Using a piping bag or a spoon, carefully fill each cannelloni tube with the vegetable and cheese mixture. Set aside once filled.

      Preheat the Oven: Preheat your oven to 375°F (190°C).

        Layer the Marinara Sauce: Spread a thin layer of marinara sauce on the bottom of a 9x13-inch baking dish to prevent sticking.

          Arrange the Cannelloni: Place the filled cannelloni tubes on top of the marinara sauce in a single layer.

            Top with Sauce and Cheese: Pour the remaining marinara sauce over the filled cannelloni, ensuring they are well-coated. Sprinkle the remaining mozzarella and Parmesan cheese evenly on top.

              Cover and Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.

                Uncover and Finish Baking: After 25 minutes, remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.

                  Garnish and Serve: Once done, remove from the oven and let it cool for 5 minutes. Garnish with fresh basil leaves if desired, then slice and serve warm.
